About the Santuario Project

Founded by Camilo Merizalde, the Santuario Project revolutionised coffee processing by merging science and craftsmanship. Originating in Mexico and expanded to Brazil, Colombia, and Costa Rica, this project explores new varieties and fermentation methods to create exceptional flavours.

This batch features the Tabi variety, a disease-resistant hybrid chosen for its sweetness and balanced cup quality. The cherries are carefully hand-sorted, soaked in filtered water for 5 hours, and then undergo 32 hours of carbonic maceration before being sun-dried on African beds — a meticulous process that results in vibrant tropical notes.
